Zucchini Cakes

What to do with all that zucchini? It is a common question many gardeners ask. The plants seem to produce and produce and produce. The bounty is plentiful. Creative or different recipes are sought after. I do not have any zucchini plants but I have friends who do. They are very generous friends and I will take as much as they want to give. (Hint Hint). I love squash, especially the summer varieties of zucchini.

I also purchase zucchini at the local farmers market. Recently one vendor had this beautiful yellow zucchini. It was so bright and vivid with dark green stems. I bought it right then and there. It had to come home with me. What to cook with it was the question. I put the word out and received a few suggestions. I decided to make these tasty little zucchini cakes.

Tasty indeed. I ate one right after I took it out of the pan. I nearly burned my mouth. Then I ate two more at dinner. The rest were devoured in no time at all. I am glad there will be plenty more zucchini this summer. These must be made again.

I think I saw the world's largest zucchini at the produce stand yesterday it had to weigh at least 5 lbs. I cam close to buying it, but I didn't know what to do with it. I could have made plenty of zucchini cakes. Looking forward to checking out this recipe :)

A friend of mine gave me a giant zucchini a couple of years ago and I had no idea they could get that big. Amazing how big they can get.
